The company claims that age estimation will be done using data from Google accounts, such as search history or the kinds of YouTube videos viewed.

For these users, Google will limit age-restricted ad categories, block personalized ads, disable Maps Timeline, and restrict access to adult-themed apps on the Play Store.

YouTube will activate “go to bed” alerts and break reminders during late-night viewing. Additionally, it will stop kids from repeatedly viewing certain types of content, like those that might cause problems with body image.
